Fettuccine Corn Salad

Ingredients
  • 1 lb fettuccine (cooked, drained, and set aside)
  • 2 cups fresh corn kernels*
  • 1 1/3 cups regular or reduced-fat mayonnaise
  • 1 cup grated Parmesan cheese
  • 2 teaspoons minced fresh garlic, about 1 large clove
  • Salt & pepper to taste
  • Chopped green onion, for garnish
Directions
Combine pasta and corn in a large bowl. Combine remaining ingredients in a separate bowl. Fold mayonnaise mixture into fettuccine and corn. Season with salt and black pepper to taste. Refrigerate several hours before serving. *2 cups frozen corn niblets, defrosted and drained well, can substitute for the fresh corn.
